A simple Canadian sauce for salmon

2 tablespoons maple syrup (or honey if you don't have maple syrup)
Juice of one lemon
2 tablespoons butter or margarine, melted
1 tsp hot sauce (or to taste)

Mix together and coat the fish all over. Bake at 400 degrees till fish is opaque. Not too long!

Since Blue Fish are in season here on the East End I thought I would share my secret to a non fishy tasting filet of Blue Fish.. I slather a bit of Horseradish and Mayonaise sauce{made to taste} on top of the filet and broil until flakey and a bit browned..
