View Full Version : Black Bean Avocado Salad with Lime Dressing

One of my favorites:
Lime Dressing:

* 1/4 cup lime juice
* 1/4 cup Extra Virgin Olive Oil
* 1 teaspoon salt
* 1/2 teaspoon coarse black pepper
* 1/8 teaspoon cayenne
* 1 clove garlic minced


* 2 medium avocados diced
* 1 can black beans drained
* 1/2 cup diced sweet red pepper
* 1/2 cup diced red onion
* 1 jalapeno diced
* 1/2 teaspoon lime zest
* 1 cup grape tomatoes (optional)
* 1/4 cup cilantro chopped


Combine all ingredients for dressing in a jar. Tighten the lid a shake until blended.
In a medium bowl add avocado, beans, red pepper, onion, jalapeno, tomato (if desired) and lime zest.
Give the dressing another shake and add to the salad. Top with cilantro.
Refrigerate until ready to serve.

Very Yummy....

don't know what I did but it isn't very pretty.

I tried to be careful when blending together.. Glad you liked it. I understand about the appearance, sometimes I make it and it looks pretty good and sometimes it looks not so good. I always tastes great though.
