I've bought from a couple of these in years past, but haven't checked them in the last few years. (That's where I first met Gibi Winklaar, later of Golden Reef restaurant fame, 20 years ago.) But the gist of these informal markets remains true. Some local fishermen will sell their catch from home-operated businesses like these. If you find that some of these aren't still in operation you should be able to get current info by asking locals when you're on the island.

Also, Chachos is a new local fish restaurant/fish market on Kaminda Lagun. If you want to buy fish, head around to the back and ask what is available. They will clean and fillet right there while you wait for a few moments. If you want to eat, head inside; you pick out your fish at the counter, have a seat, and they prepare it to order. Find Chachos on the left-hand side when you are heading to Lagun from Kaya Korona. Red building.
