Since yesterday was Cinco De Mayo, I tried a new recipe and OMG was it good! I mostly cook by taste, I don't really measure things, I eyeball things a lot!

4-6 Large Poblano chili's - these chilis vary in heat, really no way to tell except sometimes you can smell the heat!

LOTS of cojito cheese

LOTS of grated monterey jack cheese

LOTS of grated sharp chedder

1 egg

Tomatoe puree or if you prefer diced tomatoes in sauce

Roast chilis at 350 until brown, remove and peel skin off

mix the cheeses together with the egg except leave some of the grated jack cheese for topping.

slice chilis open length wise and stuff cheese mixture inside, fold over

Layer in pan as if they were lasagna noodles

Pour tomato sauce over and bake for 30 minutes at 350, remove and place left over grated cheese and return to oven to bake for another 10-15 minutes until cheese is melted and golden brown.

Serve hot with sour cream, salsa, hot sauce or whatever else your heart may desire. ENJOY!!!
