    Default Eton Mess Recipe

    Eton mess is a traditional English desert that originates from Eton University.

    It is so easy to make and typifies English summers. With Wimbledon on at the moment, it is a great alternative to strawberries & cream.

    INGREDIENTS


    • 1 punnet strawberries (about 500g)
    • 4 meringue nests
    • 1 pint double cream
    • 1 tbsp soft brown sugar
    METHOD

    1 Wash, de-stalk and halve your strawberries.
    2 Take about 1/3 of the fruit and place in a blender with 1 tbsp sugar. Whiz until you have a puree. Set aside for use later.
    3 Whip the cream until it's beginning to stiffen: If you pick up a dollop on a spoon, it should retain its shape.
    4 Place whipped cream in mixing bowl and stir in the remaining strawberry halves. Gently crush the meringue nests into smaller chunks (handy tip: Place them in a large freezer bag and crush gently with a wooden spoon or rolling pin to prevent dusting every surface with meringue)and fold those in to the cream and strawberries.
    5 Take the strawberry puree and fold through the mixture to create a marble effect.
    6 Spoon the mix into sundae glasses to serve, topping off with a swirl of puree and a cluster of delicious ripe strawberries.

    Yes indeed - traditionally served at Eton June 4th (cannot recall why this particular date?); you can also use crushed raspberries, and a dash of Frambois Liquer or Port, subsititute part of the cream with very thick Greek yoghurt, or Fromage Frais, add vanilla sugar or essence to the whipped cream.... lots of variations.
    It is lovely!

    Just remembered - the date for consuming Eton Mess (June 4th) was related to the annual cricket match, i believe against Winchester ??
