    Default Jerry's Midnight Pasta











    Easy to make. About 20 minutes. Serves 4. Adjust amounts as needed.

    I have been playing with this for some time now, I think I'm done?


    1 lb Penne pasta
    1 tablespoon of ex-verg olive oil
    3-4 ounces of pancetta, chopped fine
    1 med onion, chopped fine
    3 cloves of garlic, minced.
    1 can of cannellini beans, about 19 oz. Drain and rinsed.
    3/4 cup chicken stock, Low salt only.
    1 bunch of arugula, about 5 cups. Wash and dry.
    1 tablespoon of lemon juice


    Open a nice wine, poor 3 oz, smell, taste. Life is good.

    Boil 4 qts of water. Add salt, cook till al dente. When done, drain, but keep 1/2 cup of the water aside. Return the pasta to the cooking pot.

    In a large heavy skillet heat the oil and pancetta over med-high heat for about 3-4 min. Reduce heat to med, add the onions, cook for about 4 min. Add the garlic, 30 sec here. Add the beans, chicken stock, pinch of salt. Simmer for about 3 min or until the beans are well heated. As thsi is simmering, take a fork and smash some beans against the side of the pan until the sauce thickens.

    Add pasta, arugula, lemon juice, 1/2 cup of the set aside water to the skillet. Stir until all the ingredients are well mixed and the arugula starts to wilt.

    Salt and pepper to taste.

    Top with some grated Parm.

    Serve hot.
