These are very good muffins. You can also mix the flour with some oatmeal, add raisins or nuts.

2 cups whole wheat flour
1/2 cup sweetened dried cranberries (such as Craisins)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/8 teaspoon nutmeg
1/2 teaspoon cinnamon
3/4 cup brown sugar, packed
1/4 cup canola oil
1 teaspoon grated orange zest or dried
orange peel
2/3 cup orange juice
2 large eggs
1 tablespoon turbinado sugar (such as Sugar
in the Raw)

- Preheat oven to 375

- Spoon flour into dry measuring cups; level with a knife. Combine flour and next 7 ingredients (through cinnamon) in a large bowl. Stir well with a whisk. Make a well in the center of the mixture.

- Combine brown sugar, oil, orange rind, orange juice, and eggs; stir well with a whisk. Add we mixture to dry mixture; stir until just combined. For best results let batter rest 3-5 minutes.

- Spoon batter into mini muffin cups( or regular size muffins cups) coated with cooking spray.

- Sprinkle turbinado sugar

- Bake at 375 for 8-10 minutes or until muffins are lightly brown.
