5-6 Large Baking Potatoes
2/3 cup Butter
2/3 cup Flour
6 Cups Milk
Sour Cream to thicken (usually 8oz will do)
3/4 tsp. Salt
1/2 tsp. Pepper
1 Pound Bacon ~ cooked and crumbled
1 1/2 cup Shredded Cheddar Cheese
4 Chopped Green Onions (scallions)

Wash potatoes with skin on and prick several times with fork. Bake at 400 until done, usually around 45min to one hour. Let cool and then cut them in half lengthwise and scoop out the pulp. Set the potatoes aside.

Melt butter over low heat in a large stock pan. Add flour and stir until smooth. Cook for 1 minute, stirring constantly. Gradually add milk as you cook over medium heat, stirring constantly until the mixture is thickened and bubbly.

Add potato pulp, salt, pepper, 2 tbsp. green onions, 1/2 of the bacon and 1 cup cheese. Cook until thoroughly heated. Stir in the sour cream and add extra milk IF necessary.

Serve with the remaining onions, bacon and cheese as garnish options like you would serve a baked potato.

My kids always liked this soup with grilled cheese sandwiches.

Sounds delicious, but I put on five pounds just from reading the recipe...:D

I just think of the gained weight as "Strategic Bodily Energy Reserves"...
