Nice Jerry, but the good chef did NOT cook that rack medium rare. Look at 3:14.

We have been on the Napa Wine Train. I thought it was going to be hokey, but it really was a blast. Met some cool people from Oregon, and we ate and drank well. Vincenzo, I agree with your assessment on medium rare. That looked like it was still ba ba baing. Did you catch the rub he put on? I played it again, and still couldn&#39;t hear what he said.

Merci beaucoup mon ami, Jerald, tres bien. However, I meant the red stuff that he called, I think, anato seed. It was red. Do you know what that is? Never heard that before.

Never mind. I am going to attempt this today. We are off tomorrow, or I should say Kathi is off tomorrow for Yom Kippur. It is annatto seed.
