Ms Hause sent me this just in time for the Green Bay game last night. It is RICH...a cup will fill you up.
1/2 cup minced onion,
1/2 cup butter or margarine
2/3 cup flour
1 tsp dry mustard
1 tsp paprika
1/8 tsp cayenne
1 tsp salt
1 can (10 3/4 oz) broth (veggie is fine)
4 cups milk
12 oz beer
3 cups finely shredded sharp cheddar cheese (12 oz)
In large kettle, cook onion in butter until soft. Blend in flour and seasonings, gradually stir in broth, milk, and beer. Cook over moderate heat, stirring constantly until mixture comes to a boil and thickens. Add cheese, stirring and heating until smooth.
Serve in cups or bowls garnished with popcorn, croutons, minced parsley, chives, or minced green onion.
Becky, I used low fat margarine and reduced fat cheese. I know this must be a crime in Wisconsin, but I'm outside of Dairy Police jurisdiction.....
